Learn how to cook the best wild game chili with black bear meat.

Ingredients

1 lb ground bear meat (brisket or chuck)- 1 lb top round roast ofbears (cubed or another 1 lb. of chopped breast or chuck)- 1 medium onion (diced – Vidalia, Spanish, white)- 1 green bell pepper (diced)- 2 cans 284 ml sliced mushrooms- 1 can 341 ml whole kernel corn- 1 can 540 ml kidney beans (rinsed)- 1 can 186 ml chipotle peppers in Adobo sauce (use only half the can for a touch of heat, or the whole can for medium heat).- 1 can 398 ml pineapple slices (chopped)- 2 tablespoons honey- 2 tablespoons chili powder- 1 tablespoon oregano- 2 teaspoons paprika- 1 teaspoon cumin- 2 tablespoons tomato paste- 1 can 796 ml diced tomatoes- 1 can 796 ml crushed tomatoes- Olive oil- Salt and pepper- Toppings: Cheddar cheese, sour cream, green onions, corn chips, pickled jalapenos (cowboy candy).Serves 5-6

Instructions:

1. In a large cast-iron pot, brownbear cubes, seasoned with salt and pepper, in oil over medium-high heat. Simply brown 2 of the sides of each cube. If you’re not using meat cubes, you can skip step 1.2. Then add the ground bear and a little more oil, and cook, stirring here and there, until the ground meat starts to brown, which should only take a few minutes.3. Then add: onions and peppers and cook for a few minutes.4. Add spices (chili powder, oregano, paprika, cumin, salt, pepper) and cook for a few minutes.5. Add tomato paste and cook for 2 minutes.6. Then add the corn, mushrooms, chipotle peppers, pineapple, honey, diced tomatoes, crushed tomatoes and beans. Stir well, bring to the boil, then lower the heat and cover with a lid. Simmer over low heat for 1 to 3 hours, the longer you leave it, the better the taste.

 

If you’re using cubed meat, you’ll need to cook for at least 2 hours for the meat to become tender, if you’re using ground meat only, you can eat the chili after 1 hour of cooking. Be sure to stir every 10-20 minutes to prevent the meat from burning, and add a little beef stock or water during cooking if you feel the liquid is evaporating too much. The chili should contain a little liquid, but not too much.7. Top each bowl of chili with cheddar cheese, sour cream, green onions, corn chips and a few cowboy candies for an extra touch of sweet heat.
