Beer Battered Fish Sandwich with Tartar Sauce Recipe
Tartar sauce :
– 1/3 cup mayonnaise
– Juice of a small lemon
– 1 tablespoon finely chopped red onion
– 1 tablespoon prepared white horseradish
– 1/2 tablespoon chopped fresh dill
– 1/2 tablespoon chopped fresh tarragon
– 1 tablespoon Dijon/brown mustard
– 3 tablespoons chopped gherkins
Mix well and set aside.

Beer-coated fish:
– fish fillet of your choice (preferably flaky; we used Trigger Fish)
– Clean fillets and pat dry.
Sprinkle with Valentine Thomas Bahama Mama (https://vitalgrill.com/product/bahama-mama/) or Old Bay seasoning and salt/spice.

Prepare a pan with oil, about one inch deep. Frying should be as healthy as possible. Use AVOCADO oil, by far the healthiest and tastiest. Heat the oil to 330-350°F, no higher!

Batter :
– 1/2 cup flour
– 1/2 cup corn flour
– 1/2 tablespoon Valentine Thomas Bahama Mama Seasoning (https://vitalgrill.com/product/bahama-mama/) or Old Bay Seasoning
– 8 oz. cold light beer.
– 1.5 tablespoons crystal/Cholula hot sauce
– Slowly add the beer to the mixture and whisk until frothy.

Fry the fish for approx. 1 to 1.5 minutes on each side, until golden brown. Cool on a baking rack. Assemble the sandwich with Boston lettuce, shredded iceberg lettuce, tomato slices, thin ribbons of red cabbage and plenty of tartar sauce… And as always, use toasted brioche bread!
